QUICK Grilled Onion Appetizer Pizzas
Grilling caramelizes the natural sugars in onions; the flavor is unbeatable.
Ingredients
2 large purple onions
3 Tbsp olive oil, divided
1 1/2 Tbsp minced fresh rosemary
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground red pepper
4 (6 inch) Italian bread shells
1 (4 oz) pkg crumbled blue cheese
1/2 cup chopped walnuts, toasted
Directions
Cut each onion into 4 (1/2 inch thick) slices.
Combine 2 Tbsp oil, rosemary, and next 3 ingredients; brush over both sides of onion slices.
Cook onion, covered with grill lid, 4 to 5 minutes on each side or until browned and tender.
Brush tops of bread shells with remaining 1 Tbsp oil; cook, without grill lid, 1 to 2 minutes.
Sprinkle with crumbled cheese; top with onion, and sprinkle with chopped walnuts.
Cook, covered with grill lid, 5 to 7 minutes or until cheese melts and bread shells are golden.
Cut into wedges, and serve immediately.
