Lucile's Old Fashioned Gingerbread
| Servings: Makes 9 3-inch Squares | Prep. Time: 20 Min Prep 40 to 50 Min Bake |
My mother made this recipe every fall when the fresh apple cider was made. I can still remember the smell from the kitchen and the taste of the two together. That was before candy or costumes at Halloween time. We had pumpkins to carve and gingerbread to eat!
NOTE* This would make a great gift for any elderly friends or family.
Ingredients
1/2 cup butter
1/2 cup sugar
1 egg, beaten
1 cup molasses
3 cups all-purpose flour
1 1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground cloves
1 tsp. ground ginger
1 1/4 cup boiling water
Directions
Cream butter until light and fluffy. Beat in sugar gradually and add egg and molasses, continuing to beat until well blended. Add soda, salt and spices, then the flour alternately with the boiling water. Beginning and ending with flour.
Pour into a well greased pan. ( 9 x 9 x 2 )
Bake in a preheated oven, at 350 F. for 40 to 50 minutes, or until it springs back when lightly touched.
