QUICK Cranberry Bars

   This luscious bar cookie is chock-full of cranberries and crunchy pecans.



Ingredients

   2  cup all-purpose flour
   1  tsp pumpkin pie spice
1/2   pkg (12 oz) fresh or frozen cranberries (about 1 1/2 cups)
1/2  cup butter or margarine
   1  cup packed brown sugar
   1  egg
   1  cup pecans, finely chopped
3/4  cup confectioners' sugar
   1  T lemon juice
1/2  tsp grated lemon peel

Cranberries for garnish



Directions

   Preheat oven to 375.

   Grease baking sheet.
   In bowl, combine first 3 ingredients.  In another bowl with mixer at high cream butter and brown sugar.  Beat in egg.  Stir in flour mixture; divide dough into 4 pieces.  

   Spread pecans on piece of wax paper.  Shape each portion of dough into a 12" long roll and turn into pecans to coat well.

   Transfer to prepared baking sheet.  With your finger tips, flatten rolls into 1 1/2"-wide strips.

   Bake 15-20 minutes until golden.

   Cool on baking sheet on wire rack 10 minutes.  

   In bowl combine confectioners' sugar, lemon juice and lemon peel.

   Drizzle over strips.

   Cut into 1" pieces.

   Garnish with cranberries.
