Gooey Butter Bars

   This one uses pound cake mix instead of regular cake mix.  It is really buttery!


Ingredients

   1  pkg (17 oz) pound cake mix
1/2  c (1 stick) butter, melted
   4  eggs, divided
   1 pkg (8 oz) cream cheese, softened
1/2  tsp vanilla extract
   1  lb powdered sugar, divided
   1  c chopped pecans


Directions

   In mixing bowl, combine cake mix, butter and 2 of the eggs.  Beat 1 minute.  Spread over bottom of greased 13x9" pan.
   In another bowl, beat cream cheese until fluffy, about 5 minutes.  Beat in remaining eggs, 1 at a time.  Add vanilla and all but 1/2 cup of the powdered sugar.  Beat just until blended, about 1 minute.  Pour batter evenly over crust.  Sprinkle chopped nuts and reserved sugar over top.

  Bake at 350 degrees 35 to 45 minutes, until cake pulls away from pan sides.

  Cool on rack and cut into squares approximately 2x2".
