Cornbread Salad

   This unusual salad is popular in the south.


   1  Small pan of baked cornbread, crumbled in small pieces
1/2  cup sweet pickle juice
   1  medium bell pepper, chopped
   1  medium red onion, chopped
   1  pound bacon, cooked crisp and broken up
   1  cup mayo, not salad dressing
1/2  cup sweet pickle relish
   1  large tomato, chopped


   Crumble cornbread in bowl and add onions, pepper, bacon, tomato and relish.  Mix gently.
   In a small bowl, mix the pickle juice and the mayo.  Add to the cornbread mixture and refrigerate.
   This can be made the night before.
