Pineapple Cream Cheese Bars

   Pineapple, mincemeat, cream cheese and walnuts.  This one is good enough for company!


      1  cup butter or margarine
      1  pkg (8 oz) cream cheese
      2  cups sugar
      4  eggs
      1  T vanilla
      2  T grated orange rind
2 1/2  cups all-purpose flour
      2  tsp salt
1 1/4  tsp baking soda
1 1/2  cups crushed pineapple, drained
     1  cup prepared mincemeat
     3  cups chopped walnuts
Fluffy Icing:
1 c sugar
1 c water
1 egg white


   Cream butter, cheese, and sugar; beat in eggs, vanilla, and orange rind.  Sift together flour, salt, and soda;  stir in egg mixture until blended;  stir in pineapple, mincemeat, and walnuts.  Spread evenly into a greased and floured 13x9x2" baking pan.

   Bake in moderate oven 375 30-35 minutes until firm.  Cool in pan; cover, store overnight.

   Drizzle Fluffy icing in lines over baked dough;  let stand until set. Cut into bars.

    Fluffy Icing:  Combine 1 cup sugar and 1 cup water;  boil 5 minutes.  Beat 1 egg white until fluffy, add syrup and beat at high speed 2 1/2 minutes, until spreading consistency.

   Stir in 1 tablespoon grated orange ring.
