Old Grandmothers Cottage Cheese

This is an old recipe from the country. I have not tried it, but my mother told me years ago this was how people used to make it. You have to remember, This was before refrigerators. They kept their cold foods in the well bucket, let down. You could only go to town for supplies once a month or so.
Ingredients
1 gallon whole milk
1/4 cup buttermilk
Directions
Stir buttermilk into milk in a large container. Let stand at a temperature of 75 to 80 degrees, overnight.
The next day, cut the curdled milk, checker-board style, while still in a container, with a long spatula.
Fill the container with hot water from the faucet; let stand a few minutes.
Stir and drain whey by pouring in a colander. Rinse in 3 or 4 cold waters. Season to taste with salt, pepper, sugar and mayonnaise.
Chill to serve.
