Green Tomato Pickles
Servings: 12 Quarts | Prep. Time: 20 to 25 min prep |
This is a big recipe! It makes 12 quarts of green tomato pickles. I don't know about you, but 12 quarts would last me a long time. But, this recipe can be cut in half, or even quartered.
Ingredients
1 cup plus 2 T coarse kosher salt
1/4 cup pickling spices
24 fresh dill sprigs
24 garlic cloves, crushed lightly
12 dried hot red chilies (each about 2 inches long)
12 pounds firm green tomatoes, each one halved crosswise or quartered if large
Directions
Wash jars is hot soapy water and rinse in scalding water. Put jars in water bath container and bring to a boil. Put lids in water in a smaller pan and bring them to a boil.
Hot jars should be taken out one at a time, filled with 1 1/2 T salt, 1 tsp. spices, 2 dill sprigs, 2 garlic cloves, 1 red chili, and as many tomatoes as will fit.
When all ingredients are in the jar, cover with hot water, wipe the rim and seal with warm lids.
Note* It will take 1 month for pickles to have much flavor. Jars will seal when hot jars and hot water is used. But, they will need to be used fairly quickly.
