Easy Garden Relish

Ingredients

      3  cups fresh, corn, cut-off the cob
1 1/2  cups white vinegar
1 1/4  cups chopped, green bell pepper
      1  cup chopped, red bell pepper
      1  cup chopped onion
      1  cup chopped tomato
      1  cup sugar
   1/2  cup chopped zucchini
   1/2  cup chopped yellow squash
      2  tsp. salt
      2  tsp. mixed pickling spices
      1  tsp. mustard seeds


1/2 tsp. dry mustard
1/2 tsp. ground ginger



Directions

   Combine all ingredients in a large saucepan.  Bring mixture to a boil;  reduce heat, and simmer, uncovered, 20 minutes.
   Pack hot mixture into hot sterilized jars, leaving 1/4 inch headspace.  Remove air bubbles with nonmetal spatula, sliding it down the sides of jars to allow bubbles to escape.

   Wipe jar rims.
   Cover at once with metal lids and screw on bands.

   Process in boiling-water bath 10 minutes.
