QUICK Veal in Velvet

NOTE* Easily doubled.



Ingredients

      8  veal cutlets, pounded thin
      2  T shortening
      1  heaping tsp. paprika
      1  medium onion, chopped fine

 Flour
      1  tsp. salt
   1/2  tsp. pepper
1 1/2  cups sour cream
Noodles or Rice



Directions

   Melt the shortening and stir in the paprika.  Add the onion and saute until soft but not brown.

   Dip the cutlets in flour seasoned with the salt and pepper and add to the onion mixture.  Brown on both side over medium heat.

   Cover and simmer gently for 10 minutes.  Stir in sour cream and simmer until heated through.
   Serve with noodles or rice.
