Italian Veal Roast (Arrosto Di Vitello)

   This is simple and easy, it just takes some time.  Serve with mashed potatoes or polenta.

 



Ingredients

   1  3 pound boneless veal roast

1/2  cup butter 

Salt and Pepper

1/2  cup minced onion

1/2  cup white wine

   1  T. flour

   1  cup sliced fresh mushrooms

   1  T. rosemary leaves, crumbled



Directions

   Preheat oven to 350 F.

   Season meat with salt and pepper.

   Sear both side of meat in a skillet, in butter, until golden brown.

   Remove from skillet.

   Brown onion; add wine and flour and stir well.

   Add mushrooms and rosemary.

   Put meat on a rack in a roasting pan and pour over liquid from skillet.

   Roast in preheated oven for 1 3/4 hours.

   Serve sauce with mashed potatoes.
