Working With Chiles

Be sure to wear protective gloves when working with hot chiles:  The same oils that provide the chiles' fortifying heat can easily irritate your skin or eyes.

   To roast chilies, place whole under the broiler or on a fork over a flame until they are charred and blistered.  Cool in a plastic bag and remove stems and seeds.  This same procedure works for red peppers.  The charred flakes give a really good flavor to foods.
