February 2010Place garlic on hard surface, and tap with the bottom of a can of soup. The cans edge keeps from mashing the cloves and the peel slips off easily. Or use the flat side of a large knife. The clove is now flat enough to finish mashing with a fork. Easy way to do one clove, without using the press.
Cook garlic slow to mellow flavor, it will be bitter if burned.
Eating parsley gets rid of garlic smell, cooking parsley in a dish with too much garlic will work the same way.
Garlic on your hands? Hold a butter knife under running water.
